Once the jfx17u repo is forked, we need to update the `README.md` and `CONTRIBUTING.md` files at the top of the repo as appropriate for update releases.
This will be similar to what was done for jfx11u inJDK-8265667. I plan to copy those two files from jfx11u, changing the release version number from 11 to 17 as needed.
