Release Note: Metal is the default rendering pipeline on macOS

      JavaFX27 onwards, On macOS, change the default rendering pipeline to Metal.
      The metal rendering pipeline has been well tested, and there are no known blocker issues. In case of any issue, users can switch back to the es2 pipeline using the -Dprism.order system property.
